So although I’m now leaning more towards the ASRock + Ampere Altra 128-core, let’s say I did get the Gigabyte dual-socket and wanted to put in two 128-core in there… where can I actually buy single (or should I saw two) CPUs from? Newegg only sells the 128-core in a bundle with the ASRock motherboard, and Ebay only has 64-cores.

Take a look at this site. I have seen a 4U configuration with 8x M128-30 there.

I just take a look, and all Ampere CPUs are “Not in stock” 
Yeah, they’ve never been in stock when I’ve checked either.
Hopefully that just means you’d need to wait a few weeks as they’re specially ordered in.
